Ostrich is the largest bird on Earth, and studies on the development of this bird's organs can fill some of the gaps in information in this field. To conduct an anatomical study, 30 fertilized ostrich eggs incubated in an incubator on days 5, 9, 14, 20, 25, 30, 34, 38, and 41 were randomly selected. These eggs were transferred to the clinic laboratory with minimal time and the study was conducted after the preparation steps. For histologic study, tissue samples were taken from the pancreas of embryos from 14 to 41 days old at the same time as the anatomical study, and after the preparation steps, the tissue study was conducted with a light microscope. Considering the 45 to 50-day embryonic period of the bird, this organ is initially visible from about day 14, and the pancreatic duct is formed on day 30. The results of this study were compared with the results of similar studies on other birds. Despite the similarities found in these comparisons, there were also significant differences such as differences in the size of the pancreatic lobes, the shape of the islets of Langerhans, the time of onset of the development of the exocrine part of the pancreas, and the number of pancreatic ducts. Given the species differences and also the difference in the incubation period from egg to hatching of chicks in other birds, there were significant differences in the morphology and histology of the pancreas of the ostrich embryo compared to other birds, but in general the pancreas of this embryo was similar to other domestic birds such as chicken. For more complete studies of the development of the pancreas, the use of electron microscopy is recommended.
