بررسی آلودگی میکروبی و شیمیایی در میگوهای پرورشی و دریایی عرضه شده در شهرستان بندرعباس

چکیده

بهداشت و سلامت مواد غذایی دریایی یک نگرانی جهانی است. شیوع مقاومت ضد میکروبی و آلودگی به فلزات سنگین سبب پیامدهای ناگواری برای سلامت مصرف­کنندگان می­شود. هدف از پژوهش حاضر بررسی آلودگی به اشرشیاکلای و مقاومت آنتی‌بیوتیکی جدایه­ها و تعیین سرب و کادمیوم در میگوهای پرورشی و آزاد عرضه­شده در بندرعباس است. 60 نمونه میگو پرورشی و دریایی از بازار بندرعباس در بهار تا پائیز 1403 نمونه­گیری و به آزمایشگاه انتقال داده شد. از روش کشت خطی برای جداسازی اشرشیاکلای، تعیین مقاومت آنتی­بیوتیک از روش Disk Diffusion و از دستگاه جذب اتمی برای تعیین فلزات سنگین استفاده شد. نتایج بررسی آلودگی میکروبی در میگوهای پرورشی و دریایی نشان داد از مجموع 60 نمونه میگو، 9 نمونه به اشرشیاکلای آلوده بود. به این ترتیب میزان آلودگی به اشرشیاکلای در میگوهای دریایی 7 نمونه (66/11 درصد) و میگوهای پرورشی 2 نمونه (33/3 درصد) بود و بیشترین مقاومت آنتی­بیوتیکی مربوط به سولفامتاکسازول (100 درصد) و تتراسایکلین (88/88 درصد) و کمترین مقاومت مربوط به ایمی­­پنم (0) بود. نتایج ارزیابی فلزات سنگین نشان داد میزان آلودگی در میگوهای دریایی نسبت به سرب و کادمیوم فراتر از نمونه­های پرورشی است. نتایج ما نشان داد که میگوهای دریایی و پرورشی از منابع آلودگی به اشرشیاکلای هستند و از لحاظ فلزات سنگین باید نسبت به آزادسازی فضلاب کارخانه­های صنعتی و دیگر منابع آلودگی تصمیمات سختگیرانه­ای اتخاذ شود.

The health and safety of seafood is a global concern. The prevalence of antimicrobial resistance and heavy metal contamination has adverse consequences for consumer health. The aim of the present study was to investigate Escherichia coli contamination and antibiotic resistance of isolates and to determine lead and cadmium in farmed and wild shrimp supplied in Bandar Abbas. 60 farmed and marine shrimp samples were sampled from the Bandar Abbas market From spring to autumn 2024  and transferred to the laboratory. The linear culture method was used to isolate Escherichia coli, the Disk Diffusion method was used to determine antibiotic resistance, and the atomic absorption spectrometer was used to determine heavy metals. The results of the investigation of microbial contamination in farmed and marine shrimp showed that out of a total of 60 shrimp samples, 9 samples were contaminated with Escherichia coli. Thus, the level of Escherichia coli contamination in marine shrimp was 7 samples (11.66%) and farmed shrimp was 2 samples (3.33%), and the highest antibiotic resistance was related to sulfamethoxazole (100%) and tetracycline (88.88%) and the lowest resistance was related to imipenem (0). The results of the heavy metal assessment showed that the level of contamination in marine shrimp with lead and cadmium was higher than in farmed samples. Our results showed that marine and farmed shrimp are sources of Escherichia coli contamination and in terms of heavy metals, strict decisions should be made regarding the release of industrial waste and other sources of contamination.
